Constructed of high carbon, no stain stainless steel, each knife features a hand-honed blade angle of 15° on each side which results in a scalpel-like sharpness to deliver exceptional performance. The wedge-shaped blade and half bolster allows you to cut along the entire length of the blade. And because they're designed with a 57 Rockwell Hardness, these knives offer excellent edge retention while their triple-rivet, curved bolster, ergonomic polymer handles are permanently bonded to a full tang to support your thumb for extra grip, control and safety.
